Dr. Kim Watson was born and raised in South Jersey with her 2 older sisters and brother. She competed in many sports- primarily field hockey and lacrosse but also softball, basketball and swimming. An excellent student, she developed an interest in Biology at an early age and knew she would be happiest helping others in healthcare.

Blessed with a scholarship to Gettysburg College, Dr. Watson majored in Biology and played on the varsity field hockey and lacrosse teams for four years.

She graduated with honors with a Bachelor of Arts degree in Biology and was a member of the 1980 National Championship Field Hockey team. During those four years Dr. Watson developed a strong interest in the natural, drug-free approaches to healthcare. Chiropractic medicine was the perfect fit. She was accepted at the prestigious National College of Chiropractic, now National University of Health Sciences, in Lombard, Il. Dr. Watson graduated in 1985 earning a Bachelor of Science degree in Human Biology and a Doctorate in Chiropractic as well as a certification in Acupuncture.

1986 was a big year! Opening her practice, Watson Chiropractic Center, in Apopka in July and marrying college sweetheart, Jeff Cuddeback, in October. Dr. Watson’s practice grew quickly and a larger office was opened in 1990. Another big year, 1992, Jeff and Dr. Watson had their first baby girl, Maris. In the same year they invited into their home their 10 year old niece and a young Russian couple. The family was complete in 1997 with the birth of their second baby girl, Corinne. A second office was opened when Dr. Watson was invited to share space with an orthopedic group at the Orlando Regional Healthcare facility in Oviedo. In August 2002, the new home of Watson Chiropractic was opened on SR 434 in Longwood. It is big enough to invite other health care providers who share the vision of providing the very best service to our community.

Dr. Watson has been very active in her local, professional and church communities. She has served as President, Vice Pres, Secretary and Treasurer of the Central Florida Chiropractic Society and was appointed Chairman of the Ethics Committee of the Florida Chiropractic Association for 5 terms. Dr. Watson has been recognized for her leadership and moral character and has received a number of awards for her service within her profession. She has served in numerous ministries over 27 years at her church, St. Francis of Assisi. Called to serve and grow further, Dr. Watson, earned a Masters Degree in Pastoral Studies at Loyola University, New Orleans.

When not at the practice, Dr. Watson loves watching her amazing girls develop into beautiful and gifted adults. Her husband, Jeff, is a world-class triathlete and the love of her life. Dr. Watson is a National and World champion rower and has competed in many triathlons locally as well as internationally. Prior to rowing, she ran most distances including 5 marathons . She enjoys traveling, competing in rowing events, riding horses, practicing yoga and reading.

Dr. Watson views her practice as her vocation and is honored to have the opportunity to serve her patients. Through the 32 years Dr. Watson has been very blessed with great family, patients, employees, friends, health, and opportunities.

Rose Ann Eriov

Rose Ann has been front desk receptionist and has also worked as a therapist at Watson Chiropractic Center since February 2001. She considers herself blessed to have developed relationships with so many wonderful patients and co-workers.

Rose Ann lived in New Jersey until moving to Florida with her family in 1994. Prior to joining the team at Watson Chiropractic Center she was a regional sales manager for a major retailer and later worked as a dental assistant.

Rose Ann has been married to Bill for 33 years. They have two wonderful sons Will and Rob. She enjoys spending time with her family and friends, cooking and spending time at the beach.

Beverly Johnson

Beverly joined the therapy staff at Watson Chiropractic in 2016. It is important to her to help her patients feel their best! Beverly and her husband, Blaine, moved to Longwood in 2008 and have three daughters and one son.

Beverly enjoys being involved in her church and her children’s schools and activities. She loves music, is an avid fan of the Pittsburgh Steelers and loves watching her kids play lacrosse and tennis at Lake Brantley High School.


Originally from Michigan, Betty joined Watson Chiropractic in 2015. She enjoys being a therapist and interacting with our wonderful patients.

Betty enjoys spending time with her family and friends, volunteering with the LBHS band program and reading a good book at the beach.
